So, the only way to get a knife is by opening Apex Packs. Unfortunately, there is no other way! There is one good news that is worth noting, you are guaranteed to open at least one relic for 500 sets. This means that if you open 499 and you don't get anything, then in the next, five hundredth set, it will be 100%. Here is the official statement from Respawn:
There is currently only one bonus Relic Pack available in Apex Legends, which consists of three items for Wraith. When opening an Apex Pack, the player gains a Relic Set Drop Rate <1%. Dropping a Relic Set does not remove the Apex Set from your inventory. Relic sets cannot be crafted with valuable metals. The Relic Pack is guaranteed to drop at least once after opening 500 Apex Packs (unless the player already has all the Relics). As soon as the player collects all sets of relics, the bonus will cease to operate until new sets are added to the game.

Obviously, the fastest way to get packs is to buy them with Apex Coins, which can be obtained with real money. You can just play the game and constantly level up and earn packs for free. But this will probably be a very long process if you're not lucky.
