Zhang Bao relies on using sorcery and constantly teleports away from you so he can throw projectiles and cast spells, but don't be fooled as he's also capable of melee combat, but he relies on his sorcery for the most part. Despite all his magic attacks, you will hear the chime sound from his bell before the sorcery attack happens, which means there is no specific indicator to tell which magic attack he is using, so please refer to the attack table to determine how to counter his magical attacks. A good tactic here is to close the gap and attack him when you see him raise his hand to ring the bell, keep attacking him, or use the Qilin Earthquake to interrupt him from the witch attack. If you do kill him, he will quickly teleport and try to cast another spell or just attack you with a killing blow.
When his health is reduced to 60%, he gains additional attacks, while some magical attacks are enhanced. Some attacks, such as a single fireball, now become multiple fireballs that move quickly. It's a matter of reacting to what spell he does if you hear that chime so you know what to do next. A good way to punish him is if you can deflect his Fatal Strike move counterattack, he will trip if you successfully land him, making his defense easier and using a deathblow against him.
